First, the recipe, then the ramble. Generic ingredients first, exact ones I used in brackets.
223g Low Fat Cream Cheese (Philadelphia Extra Light Spreadable)
34g Stevia (Natvia Baking)
6g Gelatin (Davis Gelatin Flavourless)
1/4C water, divided
159g No Fat Natural Yogurt/Greek Yogurt (Tamar Valley No Fat Natural Yogurt)
45g Lite Whipped Cream (Tatua Lite Whipped Cream, or Woolworths Select - these are the ones in an aerosol can, only because I couldn't find something more like cool whip)
34g Trutein Vanilla Bean (any blend will do, I also used ON Casein in previous iterations, doubt WPI or WPI/WPC blend would do it though)
- 101g Kiwifruit (peeled and sliced)
- 57g Blueberries
- 65g Strawberries (green removed, and sliced long ways)
** 49g Pandan Bread (or any soft bread)
** Optional, I just had some that I needed to use, and found it REALLY added to the whole experience.
Total Macros for the above using my ingredients: Cal: 944.4, P: 72.2, C: 83.1, F: 31.4
Amounts should not be taken as gospel, they are just the amounts I used in today's incarnation, but each time I have averaged around that.
Process: 1. Set aside your gelatin and mix it with roughly 1/8C of water. Choose when you want to do this as you want to give it a few minutes to bloom, but not long enough that it becomes solid, gross looking jello/jelly.
- Beat cream cheese until it is nice and gooey.
- Add in sweetener (stevia) and beat until all mixed in (scrape the sides of the bowl to make sure it is all through).
- Add in all of the other non-optional ingredients (except the other 1/8C of water) and beat until all mixed in.
- Heat up the other 1/8C of water and mix it into the gelatin (this is just to loosen the gelatin if it has already begun to stick. Slowly pour the gelatin in with the rest of the mixture as you continue to beat it.
- In your serving bowl, tear up the pandan bread (if you have used it) and layer it in the bottom of the bowl (just loosely sitting there).
- Add in 1/2 of the mixture, top that with a layer of sliced kiwi fruit.
- Add in 1/2 of the mixture, top that with a layer of strawberries and blueberries.
- Cover with cling wrap and leave it to sit on the fridge for a few hours/overnight.
Now the ramble.
I used to love making protein baked cheesecakes. I started off with
the recipe that gp79 put up years ago and then moved towards adapting
Chef Bob's recipe as it was smaller and didn't consume quite so much of my daily macros.
Now, I don't tend to make food to be enjoyed across time, and eat copious amounts in single sittings, so after my nth cheesecake it started to wear a little thin, regardless of what flavours I would adapt and whether I would use Greek Yogurt or Cottage Cheese. Last week I remembered I had some tubs of cream cheese (I buy it when on special) that were not long for this world, but didn't really want to make another baked cheesecake... It's too soon... So, I then thought of making myself a no bake cheesecake, as the texture of the baked stuff was wearing a little thin on me. I found a recipe for a no bake cheesecake (which itself was influenced by gp79's recipe) at
Epicurean (a site I recommend you all to look at for bodybuilder recipes.) However as I'm from Australia, certain ingredients are unobtainable. For example, I can't find any No Fat Free Cream cheese, only Extra Light. We also have no cool whip, only light whipped cream, the stuff in aerosol cans. Basically I can't get products with calories as low as many of these recipes call for. So I improvised and adapted (slightly) and came up with my new favourite recipe.
You often hear the criticism thrown at protein recipes: "I'd rather have the real thing with a protein shake" - This is one time I'm happy to say I was NOT thinking I was having the protein-man's attempt to eat like a normal person.
I've had it a few times over the past week, each being slightly different.
- Straight forward Vanilla (all of the non-optional marked ingredients, using ON Casein Vanilla) plus some tinned fruit.
It was great, but the tinned fruit was gross.
- All of the non-optional ingredients but with ON Casein Chocolate.
Unfortunately the tartness of the yogurt clashes with the chocolate. I think it would work better with some chocolate sauce/cocoa added in, maybe coffee to offset the tart.
I mixed into this some Nutella spread and Reese's peanut butter chips.
- Vanilla (using the last of my ON Casein Vanilla) but with Pandan bread and Kaya Coconut jam swirled in.
The bread adds a whole new dimension with, giving it a far different texture and the jam swirled in gives these sudden gooey sweet spots (phrasing). I loved it.
The recipe I've included though was my favourite, and tastes almost like the middle of a pavlova (just lacking the meringue crust.)

Future attempts will experiment with mix-ins. One I have in mind will be a Thai fusion style, mixing in sticky rice instead of the bread and sliced mango cheeks on top!
